Cake of the Day: Vegan Chocolate Muffins

Just last tuesday, I went over to my friend's house for the baking session. Sure it was tiring lugging all the much needed ingredients and equipment there, but just thinking of the piping hot muffins, fresh from the oven that going to taste oh-so-good, I didn't mind it at all.

It was our first time baking any type of vegan cakes and I was unsure of how it was really going to turn out. As of that day, we have tried several healthy dessert and cakes recipes as well as altered the ingredients to make the baked goods healthier than before. But sadly, only two of those many attempts have turned out to be somewhat successful.

Anyways, we gave ourselves the challenge to try and try again until we can finally dare to eat what we made.So here's how it went...

As we were uncertain of how it was going to end, we made a small batch to test our capabilities first.

Though the muffins did turn out a little darker then expected, who would care about that if it tasted awesome right?! And it DID taste yummy (much to our surprise)! So we decided to make a second batch but this time doubling the number of SUPER AWESOME and SUPER SCRUMPTIOUS muffins. So on to the second batch we went.

So when left the try of uncooked muffin batter in the oven and sat around waiting for it to cook. Luckily, with the invention of the television, time passed super fast. Before we knew it, the batter had rose and the aroma totally wafted out of the kitchen and into the living room.


And out of the oven came 6 more beatifully crafted and passionately made VEGAN CHOCOLATE MUFFINS!Healthy(much lower in cholestrol and trans fat) and delicious, what more can you ever ask for?!

Grand Phoenix Restaurant @ Novotel Clarke Quay (Liang Court)

Instead of always patronising Crystal Jade or Yum Cha, I thought of trying dim sum from somewhere at least I have never tasted before. So after doing some online research I found Grand Phoenix Restaurant, which is has relocated from their Outram Park outlet to the current one at Novotel Clarke Quay. That is the hotel besides Liang Court for those who don't know.


What actually drew me to their dim sum was their promotion. 50% OFF ALL DIM SUM! But it didn't strike me when I placed my reservations that that would probably mean that they would inflate the prices of their dim sum items so that they won't be making any losses. 


Last Saturday, my family arrived about 15 minutes earlier than our booking time of 11.30am, but since the restaurant was still quite empty, the waiter showed us to our table without much hesitance. The ambience was quite nice, a cross between a newly furbished restaurant and a old Hong Kong style char chan teng. Lighting was quite dim though. My brother was quick to pounce on the dim sum menu and start ordering. Their dim sum menu is quite limited, with only 24 items on the list. I didn't manage to order everything on the list but I did order some from their a la carte menu too. Below are some photos of what we ordered, so enjoy!

 Pu Er Tea, if I remembered correctly

 Jelly Fish and Pork Knuckle, $8++. The pork knuckle was fine but the jellyfish was a bit tart.
Egg tarts, $4.20++ (left) and Baked Char Siew Pie, $4.20++ (right). The egg tart was too sweet for me. I actually expected it to be the flaky pastry type but this one was more of the shortcrust type. There is two servings of egg tarts here by the way. On the other hand, the char siew pie was slightly above average.

Poached Hong Kong Vegetables, $6++. I guess this was the most commendable dish out of everything that I ordered. The kai lan was nicely cooked and the sauce not too salty like others that I have tried. A must try when you visit Dragon Phoenix Restaurant.

Devouring the food as soon as it reached our table. Luckily I still managed to take some shots before it was all gone.

Banana Prawn Roll, $ 4.60++. Not exactly of standard. The banana was not really somewhat faded behind the taste of the prawns.


Steamed Rice Roll with Char Siew, $4.60++ (top) and Steamed Rice Roll with Shrimps, $5++ (bottom). These were excellent. The soft rice roll practically slips down your throat and the fillings was sufficient.

Deep Fried Prawn with Almond Clusters, $5++ (left) and Fried Spring Onion Puff with Yam, $4.80++ (right). The almond clusters were something new for me. Crispy on the outside and soft on the inside. Meanwhile, the spring onion puff will be nice if you like yam rings or wu kok. The yam filling was aplenty, however, the spring onion stuffed in the puffs were too overpowering.

Shanghai Dumpling, $4.80++. Be careful when handling this small little pouches. The skin is brittle and breaks easily.

Shrimps Dumpling, $ 4.80++. Recommended to order this. The shrimp dumplings had a smooth skin that was not too thick or floury and the prawns were fresh. 

Deep Fried Golden Custard Buns, $3.60++. Cheapest item on the dim sum menu! Not the usual steamed ones but they were still worth the money. Though the custard was not runny, it was still flavourful and sweet enough. The skin was thin, so you won't be eating too much carbo, and the custard really filled the bun. It was simply a lot of custard! SHIOK!

 Deep Fried Shrimp Dumpling, $4.60++. If you can, avoid this one. The skin was close to rubbery and the prawns inside were not fresh at all. Also, the prawns were tasteless.


We also ordered the Steamed Vegetarian Dumpling, $4.20++, and the Deep Fried Dumpling with Custard, $4.80++. Sadly, I didn't manage to get any pictures of those:( But if you do like custard buns and jin tui, do order the deep fried dumpling with custard as it is a combination of both.

Service wise,hmmm... They were a bit slow on refilling our teapot though it was left open for more than 5 minutes. Other than that, there are no other complains:D Would I recommend this restaurant then? Maybe not for the dim sum. They are popular for their yam rings and Phoenix Spring Chicken though. Maybe it would be more worth while to order those instead.

Mother's Day Celebration @ Raffles City

Just a week ago, majority of Singaporeans were combing the entire little red dot, in search of the most fitting way of showing their gratitude and appreciation for their beloved mothers. For me and my food loving mum, we decided to celebrate at Raffles City's Buffet Town. It was priced at $34.80++ per pax because of the Mother's Day weekend. But with a sumptous international buffet spread who could complain? From salad bar for the health conscious to the dessert and ice cream bar for those who dont mind the sugar rush, Buffet Town certainly had something for any picky eater. Once again, I only concentrated on stuffing myself with food that i forgot to take much pictures :P

But here are some pictures of the food after I remembered about using my dusty camera:

Satay, Grilled Mushroom and Grilled Pineapple. Sadly, the Grilled Mushroom and Pineapple were not refilled when I took this picture :(

Local delights. For those who can't give up the traditional taste of Singapore.
DIY Ice Cream Bar! The waffles are a must have! Crispy on the outside and soft and fluffy on the inside, it is a mtach made in heaven when eaten with icy cold ice cream! Be sure to fill up on the different toppings and sauces too!

Mini dessert cups and mini cakes! The strawberry mousse and black sesame cakes were the best out of all the cakes for me. The kueh lapis was quite a fail though. Hard and almost tasteless. More close up pictures of the cakes and desserts below! :)



Japanese Teppanyaki

Deep Fried Fish. Not sure which type of fish they used though. Anyways, this poor little fish did not even have to survive on the plate for more than 10 minutes. It was devoured immediately when it came out and the waiters had to keep refilling it. So stake out at this plate if you ever want to get to try it.

Various Thirst Quenchers
Tempura Section (plus Takoyaki Balls):
he tako balls weren't fantastic. It tasted mostly of flour with a minute piece of octopus in the centre. Unless you don't mind all the carbs, try not to touch these.

They had sweet potato too, but I didn't manage to get that on my camera.

Now, moving on to Seafood! I must say the seafood was extremely fresh, especially the oysters which were opened on the spot. Since Singaporeans, being the typical kiasus that we are, attacked the oysters like there was no tomorrow, the oysters were topped up frequently. Hence, FRESHNESS GUARANTEED!


The tag just says it all. Unfortunately, it was the only chinese soup they had. For the western side, they had cream of mushroom as well as minestrone soup.
DIY Pasta Bar. Just choose your ingredients and types of pasta and leave it to the chefs to whip up a plate of piping hot pasta. My brother said that they used too much herbs for the aglio olio though.

Sushi Bar. The spicy tuna one tasted really strange though the spiciness was evident.

Stir Fried Carrots with Sliced Almonds (on the left) and Mushroom Gratin (in the middle). I can't remember the one on the right though. For cheese lovers, the mushroom is a must try.

Overall, the atmosphere and food was not too bad. Make sure you visit the place with an empty stomach so that you will be able to fit in everything at the buffet.
