Cake of the Day: Vegan Chocolate Muffins

Just last tuesday, I went over to my friend's house for the baking session. Sure it was tiring lugging all the much needed ingredients and equipment there, but just thinking of the piping hot muffins, fresh from the oven that going to taste oh-so-good, I didn't mind it at all.

It was our first time baking any type of vegan cakes and I was unsure of how it was really going to turn out. As of that day, we have tried several healthy dessert and cakes recipes as well as altered the ingredients to make the baked goods healthier than before. But sadly, only two of those many attempts have turned out to be somewhat successful.

Anyways, we gave ourselves the challenge to try and try again until we can finally dare to eat what we made.So here's how it went...

As we were uncertain of how it was going to end, we made a small batch to test our capabilities first.

Though the muffins did turn out a little darker then expected, who would care about that if it tasted awesome right?! And it DID taste yummy (much to our surprise)! So we decided to make a second batch but this time doubling the number of SUPER AWESOME and SUPER SCRUMPTIOUS muffins. So on to the second batch we went.

So when left the try of uncooked muffin batter in the oven and sat around waiting for it to cook. Luckily, with the invention of the television, time passed super fast. Before we knew it, the batter had rose and the aroma totally wafted out of the kitchen and into the living room.


And out of the oven came 6 more beatifully crafted and passionately made VEGAN CHOCOLATE MUFFINS!Healthy(much lower in cholestrol and trans fat) and delicious, what more can you ever ask for?!
